Paleo Pina Colada

Dish Description

This kid friendly version of the tropical classic goes perfectly with fajitas and guacamole.  SERVES 2

Ingredients

1 cup of water

1 tablespoon unrefined coconut oil at room temperature

1 cup fresh coconut milk

12 ounces or (360 grams) frozen pineapple cubes

Pineapple wedges

Preparation

Combine water, coconut oil, coconut milk in a blender.  Puree until smooth.  Add pineapple cubes and puree until thoroughly combined.

Pour into chilled glasses and garnish with pineapple wedges.
