1 tablespoon extra virgin olive oil
1 green bell pepper
1/2 small onion finely chopped
1/2 teaspoon chopped fresh basil
1/2 teaspoon dried rosemary
2 ounces Beef Tendorloin Roast, cut into strips
3 eggs beaten
Freshly ground black pepper
Heat the oil in a cast iron skillet over medium flame. Add peppers, onions, basil and rosemary and saute for five minutes.
Layer with beef and continue to saute for one minute. Pour in eggs and stir all the ingredients for two minutes.
Season with freshly ground black pepper to taste.
