2 tablespoons extra virgin olive oil
1 ounce or (30 grams) leftover pork tenderloin, diced
2 scallions, diced
1 teaspoon nutmeg
1 teaspoon dried thyme
1 teaspoon garlic powder
1/2 teaspoon ground cloves
Cayenne pepper, to taste
4 6-ounce (or 180 gram) sole fillets
Heat the oil in a cast iron skillet over medium heat. Add the pork and scallions. Saute for three minutes.
Combine nutmeg, thyme, garlic powder, cloves, and cayenne pepper in a small dish.
Sprinkle fillets with spice mixture, evenly coating each side. Place in pan with pork and cook for four minutes, turning at the halfway point.
