Signature Salad

Dish Description

There is no limit to the amount of imagination and variation you can use to create your personal favourite salads.  Here is one combination of sweet and savoury fruits and veggies for your consideration.  Experiment until you develop your own signature salad.  SERVES 4

4 cups wild organic mixed green lettuce

1/4 small red onion, sliced

4 large strawberries, washed and sliced

2 ounces or (60 grams) raw pecans

1/2 medium avocado, sliced

1/4 cup raspberries

4 lemon wedges

Olive oil, to taste


Drain washed lettuce in a salad in a salad spinner.  Place the lettuce in a large shallow bowl.

Arrange red onions, strawberries, pecans, avocado and raspberries over the lettuce.

Serve with lemon wedges and a decanter of olive oil on the side.  Dress salad to taste.
